This year's chilli plant have started to tire and most plants have stopped cropping. Rather than throwing the plants onto the compost heap at the end of the season you can
over-winter chillies and get a head start on next year's growing season. By over wintering chillies you can get 2 or 3 years of crops from chillies. Since some varieties need a much longer growing season in cooler climates you maximise the season with over wintered plants.
I cut back all the foliage, only leaving a bare stem about 20cm tall. They will only need a light watering once a week to stop the soil drying out. I expect to see
fresh foliage appearing in January.
