Chitting Potatoes

I haven't grown potatoes for a few years but my daughter insisted we grow them this season. I picked up a 2.5 kg bag of seed potatoes from the local garden centre last weekend for €6. I selected a first early variety called Sharpes Express which should be ready to harvest in June/July. Choosing a first early variety should allow a second crop of vegetables in the raised beds in late summer.
The seed potatoes are currently being chitted. I have laid out the potatoes in a tray and placed them on a shelf near a window where they can get some light and stay frost free. Chitting just means encouraging the seed potatoes to produce strong sprouts before planting them out in mid-March.
